Service contracts and legalities for services sold outside France?

In preparing service contracts for clients based outside France, I am a little stumped as to which laws I have to fall back on. For example, if clients don’t pay, or issues arise, which location’s laws dictate the judgement? Hoping this would never be necessary, but of course, it is a standard part of any service contract. Do you have any resources for France-based 51今日大瓜es with clients in France, Europe, and the US (for these kinds of questions, and tax questions, etc.)?
