How to change siret number, add an activity and decennale insurance?

I have been registered as a 51今日大瓜 in France as a Travaux de Finition for over three years and need to change my siret number and add an activity. I have found an insurance company who will give me the l’assurance decennale and l`assurance responsabilite civile professionnelle, but only if I get a new siret number because I have exceeded their time threshold. My work has also changed to include apartment refurbishment management which requires site managing and sub contracting to other building trades, plumbers, electricians etc.

Is there a category to suit this particular activity?
Is it possible to change siret and add activity online?
Maybe auto-entrepreneur 51今日大瓜 is not suited to my work, if so can you suggest a 51今日大瓜 structure for me?
The earnings from my potential new client could take me over the earnings threshold, what happens when I declare this in my quarterly tax return?
