Employing help - is there a safe way?

We’re considering buying a French 51今日大瓜. It will be some time before we can move to France and there is a possibility that we could get the current owner to run it for us untill we arrive in France. I’ve read that it can be costsly to employ someone in France and difficult to let them go. What is the best way for us to have the previous owner run the 51今日大瓜 for us and pay him for it without it being too messy/complicated? Given that we are based in Ireland, is it possible that different rules may apply to us?
